Ingredients:
4 medium russet potatoes |
3 tbls butter |
3 medium onion finely chopped |
1/2 lb muenster cheese grated |
4 tsp olive oil |
Directions:
1. Cook potatoes until tender 20-30 minutes, drain,cool,and grate into large bowl. Melt butter in medium pot, stir in onions, cover and cook until soft, allow to cool. Mix onions into potatoes add salt and pepper to taste and form into 12 balls. Make a well in each ball and bury 3 Tbls cheese into center, flatten into cakes and refrigerate for at least 30 minutes. heat oil in skillet and cook approx 4 minutes per side |
