Made this salad for dinner last night. Fairly inexpensive, fresh-tasting and just right for a warm summer night! Serve with a cold, crisp white wine and some crusty bread! Good if you are on a budget! Ingredients:
8 oz. pkg. imitation crabmeat |
8 oz. pkg. imitation lobster meat |
1/3 cup diced celery |
1/4 cup diced onion |
4 teaspoons finely diced fresh chives |
1 -2 teaspoons minced fresh tarragon leaves |
1/3 cup mayonnaise |
3 tablespoons sour cream |
1 teaspoon fresh lemon juice |
1 teaspoon dijon mustard |
salt and pepper to taste |
Directions:
1. In a medium bowl, lightly toss the crabmeat, lobster meat, celery, chives and tarragon together. 2. In a small bowl, stir together the mayonnaise, sour cream, lemon juice and mustard. Add the dressing to the crabmeat mixture and stir until well coated. Season with salt and pepper to taste. Chill for 1/2 hour in the refrigerator. |
