I eat this salad almost everyday, it is filling and healthy, and most importantly delicious. It makes you feel good. Ingredients:
3 hearts of romain washed and spun dry (thinly sliced) |
1 large red onion (diced) |
1 english seedless cucumber (cut legnthwise and thinly sliced) |
1 can chick peas (garbonzo beans) drained and rinsed |
1 can cannelini beans drained and rinsed |
1 jar sun dried tomatos in oil (thinly sliced) (optional) |
1 package feta cheese |
olive oil (to dress salad) to taste |
lemon juice (to dress salad) to taste |
Directions:
1. Combine all ingredients, toss together. Dress with olive oil and lemon juice. It is very refreshing, filling and healthy. Enjoy! |
