Having leftover zucchini , I wanted to use it for something different than cakes or loaves. I heard about zuke pizza and so when I saw a recipe in the newspaper without the addition of tomato sauce , I tried it and it turned out great, my family raved about it. Read more .- I added some of my tips to prevent a soggy pizza. Next time I will add mushrooms and even anchovies! Ingredients:
1, ball of pizza dough for a 12 inch round pizza pan |
cornmeal for dusting |
olive oil to brush over the dough |
basil, oregano, garlic powder- or fresh garlic if desired |
mozzarella cheese, sliced or shredded |
1 meaty tomato- use some plum tomatoes |
1 1/2 cups zucchini- squeezed dry |
Directions:
1. Use any prepared home made or store bought pizza dough 2. Sprinkle pan with some cornmeal ( my tip, better than greasing and crust slides off pan easily ) 3. Place on dough to form crust 4. Brush dough with some olive oil 5. Sprinkle with basil and oregano and garlic salt to taste or fresh minced garlic 6. Layer on sliced or shredded cheese 7. Place on tomato ( my tip use a plum or thick skinned tomato ) 8. Scattered on the squeezed dry zucchini ( my tip, forget about draining as squeezing in a clean dish towel really removes the excess liquid!) 9. Bake in a 425F 25 minutes or crust is golden and cheese is melted and browned 10. Let cool in the pan a few minutes and slice in pieces to serve |
