Easy Zippy Beans And Rice |

An easy rice and beans dish that can be altered easily to one taste. If you don't have access to instant rice or just don't care to use it, make up your own rice before hand. Ingredients:
1 can (15 oz) black beans, rinsed and drained |
1 can (10 oz) diced tomatoes with green chilies, undrained |
1 c frozen corn |
3/4 c water |
1 tsp. salt, optional |
1 c uncooked instant white or brown rice ( i used white) |
1 green onion, sliced |
Directions:
1. In a skillet, combine the beans, tomatoes, corn, water, and salt if desired. 2. Bring to a boil; stir in rice. 3. Cover and remove from the heat. 4. Let stand for 5 minutes or until liquid is absorbed. 5. Sprinkle with green onion before serving. |
