Easy cheesecake, no baking and so great with the raspberry flavor Ingredients:
1 pint heavy cream |
11 oz softened cream cheese |
3/4 cup sugar |
vanilla |
3 pkgs of lady fingers |
1 can comstock raspberry |
raspberry perserve |
Directions:
1. Whip heavy cream and set aside. 2. Combine cream cheese with sugar and 1 tbsp vanilla ( I also use a few drops of raspberry liquor). 3. Fold cream cheese mixture into heavy chream 4. Apply lady fingers to side of spring form pan and to bottom. 5. Spoon some of the comstock to bottom and then spread also along sides. 6. Add 1/2 of the cheese mixture. 7. Put holes into cheese mixture and add warmed up raspberry preserve and swirl. 8. Add another layer of lady fingers and spread more comstock , then add the balance of cheese mixture, repeat raspberry preserve into holes & swirl, 9. Save the of the Comstock for topping. 10. Refrigerate overnight. 11. When ready to serve spread balance of Comstock over top for presentation. Decorate with fresh raspberries. |
