This one grabbed me for seconds at a potluck recently, so I just had to snag the recipe from the chef. I was amazed at how easy it was, and if you've never liked black bean salad...well, just try this one! Update Jan 8, '08: I just realized that I should warn those who love things hot & spicy that this is NOT! It is what I would consider tex-mex for those who don't like things hot. Hey, man, what can I say, I live in Canada! Ingredients:
3 (15 ounce) cans black beans (or experiment with different beans) |
1 (15 ounce) can whole kernel corn |
1 cup mayonnaise |
1 (10 ounce) bag chili-n-cheese fritos corn chips (since these are hard to get in canada, any corn chips will do, preferably bbq or chili flavored) |
green onion (optional) |
