These basic tacos are a quick weeknight staple made with inexpensive, durable ingredients easy to keep on hand. We try maximize nutrition and healthfulness by small changes: lean turkey is good protein , low-fat and black beans add fiber and nutrients. Kids love interactive food-skillet & toppings on the table and let them dig in! Ingredients:
1 lb ground turkey (lean or extra-lean) |
1 ounce taco seasoning (el paso) |
1 (15 ounce) can black beans, drained & rinsed (bush's) |
8 taco shells (hard tacos) |
1/2 cup colby-monterey jack cheese |
1/2 cup iceberg lettuce, shredded |
sour cream, to taste |
salsa, to taste |
Directions:
1. Brown ground turkey in large skillet oer medium (if using extra-lean, spray skillet with non-stick spray first), breaking up turkey, until cooked through. 2. While browning turkey, heat taco shells on rimmed sheet at 325, 5 to 7 minutes. 3. Sprinkle turkey with taco season. Reduce heat to low and add black beans; stir to coat with seasoning. 4. Assemble tacos: turkey/beans, cheese, desired toppings. 5. Low-carb dieters might omit the taco shell. 6. Good served with fresh corn and prepared brown rice! |
