Simple and satisfying! If you love garlic and vegetables and are looking for an easy meal, this if for you! Ingredients:
at least 2 bell peppers (i like to use red or orange, they are sweeter) |
broccoli: one head is good |
fresh crushed garlic 1 or 2 cloves depending on taste |
garlic salt to taste |
mushrooms, however many you want |
1/2 cup fresh spinach leaves |
white onion: 1 is enough |
1/2 cup of frozen edamame: peeled is easier |
1 cup brown basmati rice or multi grain rice |
pinch of sea salt (optional) |
2 tablespoons canola oil (also can use sesame oil for a better taste) |
Directions:
1. Cut the vegetables up as you would like. This is the hardest part. Medium slices work best. 2. In a large pan, coat with Canola oil. Add crushed garlic. Cook on medium low. 3. Start to add veggies. Add big veggies first, broccoli, peppers, anything that takes the longest to cook (asparagus is good here too). Crank the temperature up to medium high. Then add other veggies, stirring as you do. Add the spinach last because it shrivels up to nothing. If you need more oil add it. 4. Add pinch of sea salt and garlic salt to taste while stirring. 5. Make rice according to directions on the box. 6. When all the vegetables are soggy it’s done. Serve over rice (soy sauce is optional). |
