I love this rice side, it goes nicely with any meat, poultry or fish entree. A great side to serve to company as well as family. It's very colorful and presents well. Generally, rice is not a favorite of mine, but I make an exception for this dish! Read more !! Ingredients:
1 t. canola |
1 each onion, carrot and stalk of celery, sliced thin |
1/2 sweet red pepper, chopped |
1 can chicken broth |
1 1/2 c minute rice, uncooked |
1 c frozen peas (the petite peas) |
Directions:
1. Heat the oil in a 12ā€¯skillet. 2. Add vegetables; cook until crisp tender 3. Add broth; bring to a boil 4. Stir in rice and peas; cover. Simmer 5 minutes 5. Remove from heat and let stand 5 minutes before serving |
