I got this interesting recipe from an old diet cookbook but I've forgotten which one. This is a great way to get your vegetables, you'll notice. You can choose from chopped broccoli, onion, celery, cauliflower, green or red bell peppers, and/or cabbage; sliced mushrooms or sliced carrots; Chinese peapods, and/or green beans. Ingredients:
4 cups vegetables, sliced (see choices above) or 4 cups vegetables, chopped (see choices above) |
1 (28 ounce) jar spaghetti sauce |
hot cooked spaghetti, for 5 |
Directions:
1. Assemble 4 cups of vegetables, choosing from the chopped or sliced choices above, the peapods or beans. 2. Mix the vegetables with the spaghetti sauce in a large saucepan, cover and simmer until vegetables are tender. 3. Serve over hot cooked spaghetti. |
