Ingredients:
1 medium potato, red, cut into cubes
1/2 small carrot, sliced thin
2/3 c. celery, chopped
1 c. plain soy milk
1 dried dill to taste
1 garlic to taste
1 black pepper to taste
Directions:
1. Boil the potato and carrot in water until soft (about 15 minutes), drain. Lower the heat, add remaining ingredients and simmer to combine the flavors.
