makes 1 big serving or 2 smaller bowls that can be eaten with a side salad or pita bread Ingredients:
1 medium potato, red, cut into cubes |
1/2 small carrot, sliced thin |
2/3 c. celery, chopped |
1 c. plain soy milk |
1 dried dill to taste |
1 garlic to taste |
1 black pepper to taste |
Directions:
1. Boil the potato and carrot in water until soft (about 15 minutes), drain. Lower the heat, add remaining ingredients and simmer to combine the flavors. |
