The rought draft of my first Turkey Chili Recipe. It turned out great but I want to try different vegetable amounts to see what works the best :) It creates three very filling portions and is very healthy :) Ingredients:
1/4 lb lean ground turkey |
0.5 (8 ounce) packet taco seasoning |
1/2 onion, diced |
1 garlic clove, diced |
1 (14 ounce) can diced tomatoes |
1/2 cup sliced mushrooms |
1 cup frozen corn |
1/2 cup black beans (i had these leftover, you could definately add more) |
1 fresh zucchini, chopped |
1 tablespoon red pepper flakes (optional) |
Directions:
1. spray medium/large pot with pam and cook onion and garlic until tender. 2. add the Zucchini and Mushrooms, cook for about 5 min then set aside. 3. add ground turkey and sprinkle with taco seasoning, cook until browned. 4. drain excess fat from pot ( I use a colander, then replace turkey into pot). 5. add remaining ingredients and mix well. 6. bring ingrediants to a boil then cover and simmer for 30-40 min. 7. If too thick, add 1/2-1 cup boiling water. |
