This is my own recipe and my husband loves it. I make it in my food processor, but a blender should work fine too. Ingredients:
3 cups cherry tomatoes |
1/2 red onion, diced |
1 tablespoon fresh parsley |
1 lime, juice of |
2 teaspoons white vinegar |
1/2 cup tomato paste |
Directions:
1. In a non-stick pan, sautee red onion in until tender 2. Add all ingredients to food processor and pluse about 7-10 times until your desired consistency is reached. 3. Chill for 1 hour and serve. |
