Easy Tomato Chickpea Soup |

Really easy - and very tasty! Ingredients:
1 can chick peas drained |
1 28 oz can tomatoes (with juice) |
1 bottle roasted red peppers, drained |
3 cloves garlic, minced |
1 onion, chopped |
1 tbsp olive oil |
1/2 tsp red pepper flakes |
1 tsp oregano |
2 cups vegetable or chicken broth |
salt and pepper to taste |
Directions:
1. Saute onion and garlic in hot oil for 3 minutes 2. Purree all other ingredients in food processor or blender 3. Heat over low heat in a pot 4. Serve with fresh basil and sour cream, if desired. |
