Easy Tomato Basil Drop Biscuits |

These were an experiment that came about while i was making a batch of tomato basil soup. I wanted some biscuits to have with the soup and the thought hit me - why not put some of the flavours from my soup into the biscuits? Read more ? Well, it worked wonderfully and thought i'd now share the recipe. :) Ingredients:
2 cups all purpose flour |
1 1/2 tsp baking powder |
1/2 tsp salt |
1 tsp sugar |
1/2 cup unsalted butter |
1/2 cup milk |
2 medium tomatoes, seeded and diced |
big handful of fresh basil, bruised and roughly chopped |
Directions:
1. Mix all ingredients together. Drop by spoonfuls onto a greased baking sheet. 2. Bake at 425 F for about 15 minutes or until lightly brown. :-) |
