Easy, Tangy Apricot-Glazed Pork |

My mom found this simple recipe in a magazine but I don't know which one. It was easy and yummy and my usually picky boys devoured the pork tenderloin I made with it - no leftovers! Using honey-mustard makes the difference. Ingredients:
1/4 cup all-fruit apricot jam |
1/4 cup honey mustard |
2 lbs pork tenderloin (2-1 lb pieces) |
1/4 teaspoon salt |
1/8 teaspoon fresh ground black pepper |
Directions:
1. Heat oven to 400º. 2. Mix the jam and mustard in a small bowl. 3. Rub pork with the salt and pepper. 4. Roast pork for about 8 minutes, then turn and brush the top with the glaze. 5. Roast for another 8 minutes then turn and glaze the top. 6. Pork is done when the meat thermometer reads 160º, or after about 25 total minutes. |
