I grew up eating this on nights when my mom didn't have time to put a complicated meal together. I now make it when I have to work late or when we have a really busy evening planned. Ingredients:
2 heads of romaine lettuce or 2 bags prepared lettuce |
1 lb ground beef or turkey |
1 package taco seasoning |
1 can black beans |
1 can mexi-corn |
1 small onion chopped |
1 med tomato chopped |
1 bottle french dressing |
1 bag nacho doritos |
2 cups shredded cheddar cheese |
1 can sliced or chopped olives |

sour cream |
cilantro |
guacamole |
Directions:
1. Brown ground beef on the stove top. Do not drain. Add half the package of taco seasoning and stir to combine. 2. Add the second half of the taco seasoning to the bottle of french dressing and shake to combine. 3. Assemble the salad as follows: 4. Put the lettuce on the plate, top with corn, black beans, onion, tomatoes, black olives and cheese. Take a hand full of Doritos and crush over the plate. Add any optional ingredients if you want and then top with dressing. 5. Enjoy! |
