This casserole is delish! My kids love it and my 12-year old daughter requests it every time I say What do you guys want for dinner? :) And the best is...it's super easy! It can easily be doubled and I usually do! Ingredients:
1 lb ground beef |
1 cup salsa |
1 (1 1/4 ounce) packet taco seasoning (mccormicks) |
1/2 cup salad dressing (miracle whip) |
2 cups crushed nacho cheese flavored tortilla chips |
2 cups shredded colby-monterey jack cheese |
1 medium tomato, chopped |
2 cups shredded lettuce |
Directions:
1. Preheat oven to 350°F. 2. Brown ground beef; drain. 3. Mix ground beef with salsa, taco seasoning, and salad dressing. 4. Mix well. 5. In a 2-quart baking dish, layer half of the meat mixture, 1 cup of cheese and 1 cup of the tortilla chips. 6. Repeat the layers. 7. Bake, covered, for 30-40 minutes or until heated through and bubbly. 8. Take off cover the last 10 minutes of baking. 9. Top with lettuce and tomato before serving. |
