Easy Sugar Free Coconut Pudding |

a sugar free, lower fat coconut pudding and yummy indeed! Ingredients:
6 t. splenda |
1/4 c. cornstarch |
1 can (14.5 oz.) light coconut milk |
3/4 c. skim milk |
1/2 t. vanilla |
1/2 t. coconut extract or flavoring |
1/4 c. flaked coconut |
Directions:
1. Mix Splenda and cornstarch in a saucepan. 2. Gradually add the milks and mix until smooth. 3. Add remaining ingredients and cook and stir over medium heat until it comes to a boil and thickens. 4. Spoon into 4 custard cups. 5. Cover with plastic , prick a few holes on top. This presvents a skin from forming 6. Chill. 7. Garnish with fresh fruit if desitred |
