This is a recipe I received from a friend. It's very easy, filling and it's semi-healthy while tasty. It's also a favorite with my children. Ingredients:
3 large zucchini |
6 ounces cornbread stuffing mix |
16 ounces reduced-fat sour cream |
1 lb turkey sausage |
1 cup shredded cheddar cheese |
1/4 cup grated parmesan cheese |
Directions:
1. Slice stem end off zucchini, cut in half then slice in half long way, scoop out the middle to make a 'boat'. 2. Place on a baking tray and sprinkle with parmesan & salt, bake at 350 for 10-15 minutes. 3. Prepare stuffing according to directions. 4. Cook sausage. 5. Mix stuffing, sausage, sour cream and 1 cup of shredded cheese. 6. Place stuffing/sausage mix inside of zucchini boats. 7. Bake for 20 minutes. |
