A very easy syrup to add a special touch to a brunch or just a Sunday breakfast. Also a great way to use up those fresh berries that'll keep for some time in the fridge. Ingredients:
1 pint fresh strawberries, halved and mashed slightly |
1 cup white sugar |
3/4 light corn syrup |
2tsp nutmeg, ground |
**strawberries should yield about 1 cup of liquid...adjust sugar amount per taste, as well as amount of liquid yielded |
Directions:
1. In medium saucepan, cook strawberries over medium heat, stirring occasionally until they boil. 2. Carefully strain berries using cheesecloth or jam strainer. 3. Return juice only back to pan and add sugar and syrup. 4. Cook over medium heat, again, bringing it to a full boil and continue to boil 1 minute. 5. Stir in nutmeg. 6. If a foam forms on the top, just skim it off. 7. You can serve this immediately or it can be stored in the fridge. |
