Easy Strawberry Mint Lemon Cooling Refresher |

I know what you're thinking- how on earth would those 3 flavors go well together?! But you just have to trust me, they go together beautifully and it's not really until you hit that aftertaste that you realize this. A wonderful cooling refreshment for the summer, and it's pretty lite you so don't have to feel too guilty indulging or going back for seconds! This is a great summer snack, and also as a dessert after a spicy meal because the cool yogurt relaxes your taste buds from the spices and the mint freshens your breath after all that garlic and cayenne almost sets fire to your neighbor. ;) This recipe is fine suited to doubling, tripling, etc. Ingredients:
1 pint strawberry |
1 cup plain yogurt |
1 teaspoon lemon juice |
5 -6 drops lemon extract (no more than 1/8 tsp or so) |
1/2 teaspoon sugar |
1/3 cup fresh mint leaves, crushed (dried mint just isn't the same for this!) |
Directions:
1. Prepare the yogurt base by first putting the cup of plain yogurt into a serving bowl, stir it well to get all the lumps and liquid dispersion out. 2. Add the sugar and lemon juice, stir again. 3. Lemon extract- using a rounded 1/4-tsp size measuring spoon is good for this if you don't have an extender spoon, carefully pour into it, filling it a little less than halfway. Or, use a dropper to get about 5-6 drops of extract. 4. No matter how you get it, put the teensy bit of lemon extract into the yogurt mix and blend it well. 5. Or - you can cheat and just use 2 containers of Dannon Light & Fit Lemon Chiffon yogurt or La Yogurt Lemon Meringue instead of bothering to mix anything. Hey, I'm all about making things simple for ya. ;) Anyway - 6. Wash, husk, and cut the strawberries. 7. Put the chopped strawberries into the yogurt and mix them inches. 8. Wash the mint springs and just cut the leaves off- put about half the leaves into the mix and top with the rest. Enjoy! |
