2 cups sliced fresh strawberries |
1 box white cake mix |
1 small package strawberry jell-o |
3 whole eggs |
1⁄3 cup oil |
1 cup water |

3 tablespoons butter |
21⁄2 cups confectioners’ sugar |
strawberries and juice |
Directions:
1. Make cake: 2. Heat oven to 350 degrees and lightly grease pan of choice. ( layer pans, cupcake tins, oblong pan etc ) 3. Set aside 1⁄3 cup of berries for the icing. 4. Mix the remaining ingredients together using a hand 5. mixer. 6. Mix on medium for at least 2 minutes. 7. This will mash the strawberries some what, which is fine. 8. Bake according to instructions on box. 9. The cake will likely need a little extra time because the berries give it more moisture. 10. Make icing: Melt butter and add confectioners’ sugar 11. and enough berries and juice to get the right consistency. 12. It might need more confectioners’ sugar or a small amount of 13. milk to make it right. 14. notes: makes 24 cupcakes |
