Easy Stove-Top Cheese Grits |

This is a tasty recipe I made on the spur-of-the-moment, not realising that most cheese grits recipes are baked. These are also delicious with goat cheese in place of the cream cheese. Ingredients:
1 cup reduced-sodium fat-free chicken broth |
2 cups water |
1 cup milk (i used fat-free, it worked fine) |
1 cup quick-cooking grits |
1/2 teaspoon salt |
3 ounces reduced-fat cream cheese |
1 cup sharp cheddar cheese, shredded |
1 teaspoon hot sauce |
1/2 teaspoon seasoning salt |
Directions:
1. Combine chicken broth, water, and milk in large saucepan. Bring to a boil. Add grits and salt, stir, cover, and reduce to a simmer. Cook five minutes. (For thicker grits, cook slightly longer.). 2. Remove from heat and stir in cream cheese, cheddar, hot sauce, and seasoned salt. 3. Serve warm. |
