Easy Stir Fried Spinach-ci |

A quick, Asian-ish inspired spinach side dish. Ingredients:
1lb fresh baby spinach |
1 leek, diagonally sliced in 1inch pieces |
2 cloves garlic |
1 small can water chestnuts, sliced |
3oz roasted red pepper, sliced |
1t soy sauce |
squirt of fresh lime juice |
red pepper flakes and black pepper to taste |
about 2t peanut oil |
Directions:
1. Heat oil, soy sauce, red pepper flakes and lime juice in wok or large stir fry pan. 2. Add garlic and leek and cook until just tender, about 1-2 minutes 3. Add spinach, water chestnuts and roasted red pepper, stir fry another couple of minutes until spinach is tender. 4. Toss with another squirt of lime juice and black pepper before serving. |
