Easy Split Pea with Shitake Mushrooms, Spinach, and Avacado. |

Low calorie, high fiber, nutrient rich. Ingredients:
2 1/4 cup soup |
10 oz spinach |
3 1/2 oz shitake mushrooms |
1 tbsp olive oil |
1/2 avocado, ns as to florida or california avocados |
2 wedge yields lime juice |
Directions:
1. Put the soup mix in a medium sized pot. Boil 3.5 cups of water add, and stir, lower heat to medium-low. Defrost spinach and break up into liquid. Halve shitake mushrooms and saute' in medium sized frying pan on low heat for 5-8 minutes with olive oil; season with ground pepper and sea salt to taste. Add mushrooms to soup. Simmer for 8-10 minutes and serve. Cut avocado into cubes, drizzle with lemon or lime-juice and add as garnish with parsley. |
