Easy Spanish Rice

A super easy to make Spanish Rice dish than can also have chicken added to make an entire meal.
Ingredients:
1 cup uncooked regular rice
1/2 cup onion chopped
2 tablespoons canola or vegetable oil
2 1/2 cups water
1 can (8 oz) tomato sauce
1/2 cup green bell pepper chopped fine
1 1/2 teaspoons salt
1 tablespoon chili powder
1/4 teaspoon garlic powder
optional
6 chicken thighs or 3 chicken breasts (halved) par cooked and ready
Directions:
1. If using chicken - par cook and set aside
2. Cook rice and onion in 10 skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender
3. Stir in remaining ingredients
4. Bring to a boil
5. Reduce heat. Add chick if using
6. Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.
7. Remove from heat for 5 minutes. Serve.
