Simple recipe that our family loves. Ingredients:
2 tablespoons bacon grease or 2 tablespoons other cooking oil |
1 cup long grain rice (we use jasmine ) |
1 1/2 teaspoons chili powder |
1 teaspoon salt |
1/4 teaspoon cumin |
1/2 teaspoon garlic powder |
1 teaspoon oregano |
1 medium onion, chopped |
1 (8 ounce) can tomato sauce or 1 cup , chopped fresh or 1 cup canned tomato |
2 cups chicken stock or 2 cups vegetable stock |
Directions:
1. Heat oil in a large pan that has a tight fitting cover. Add rice and saute over medium heat until the grains are starting to become translucent. Add onion then saute a few minutes more. When the onion is soft add the spices, stirring to mix in well, add the stock then tomatoes. When it comes to a boil put on the lid and turn heat to low. Cook time is around 20 minutes.Keep covered until done. |
