Easy Southwest Chicken Rolls |

Chicken Cordon Blue with a southwest twist. The pepper cheese is great in this dish, and it is super easy to make. Ingredients:
4 boneless skinless chicken breast halves |
1 (5 ounce) can whole green chilies, drained |
4 ounces monterey jack pepper cheese, sliced |
1 egg |
2 tablespoons water |
1 cup tortilla chips, finely crushed |
salsa |
lime wedge (garnish) |
Directions:
1. Flatten chicken breast halves between 2 sheets of plastic wrap. 2. Top each chicken breast with 1 whole green chile and 1 slice of cheese. 3. Roll up and secure with toothpicks. 4. Whisk together the egg and water in a shallow bowl. 5. Dip chicken in egg mixture; dredge in tortilla chips and place in a 13 x 9 baking dish. 6. Bake at 375ºF. 7. for 35 minutes. 8. Let set for 5 minutes before serving. 9. Serve with salsa and garnish with lime wedges. |
