Very comforting very tasty soup. Ingredients:
3 cups frozen peas |
1/4 cup chicken broth |
1 cup heavy cream |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/2 teaspoon freshly-grated nutmeg |
dollop of sour cream |
Directions:
1. Boil peas in salted water until tender according to directions on the package. 2. Drain the peas and place in a blender or food processor. 3. Add chicken broth and purée until smooth. 4. Add heavy cream a little at a time and blend well. 5. Pour into a saucepan and stir in salt, pepper and nutmeg. 6. Heat thoroughly but do not boil. 7. Garnish each bowl with a dollop of sour cream and serve. |
