5-Ingredient Fix Contest Entry. A delicious, easy to fix, hearty winter meal. Ingredients:
2 cups cubed roast beef (leftover roast beef is good) |
1 -2 cup sliced cooked carrot |
2/3 cup chopped white pearl onion |
1 (12 ounce) jar savory beef gravy |
1 (24 ounce) package simply potatoes traditional mashed potatoes |
Directions:
1. Preheat oven to 375 degrees. Lightly spray a 3-quart casserole dish with a non-stick cooking spray.
2. In a large mixing bowl, combine beef, carrots, onions and gravy; fold to combine all ingredients well.Turn into prepared casserole dish.
3. Evenly spoon mashed potatoes on top of all ingredients in casserole dish.
4. Place in preheated 375 degree oven and bake for 30 minutes. Serve hot.
