Easy Sesame Cucumber Salad |

Here is a fresh, easy, lowfat and delicious side salad for those hot summer days. Load up on those fresh cukes and slice away. You will love this. Ingredients:
6 cups thinly sliced cucumbers. (slice as thin as you can) |
1 tbs kosher salt |
2 green onions, sliced thin |
1 garlic clove, minced |
3 tbs light soy sauce |
2 tbs white wine vinegar |
1/8 tsp cayenne pepper |
1 tbs sesame seeds, toasted. |
Directions:
1. Place the sliced cucumbers in a colander. Set the colander on a plate. Sprinkle cucumbers with salt and toss. Let stand for 30 minutes. Rinse and drain well. 2. In a bowl combine all other ingredients. Add the cucumbers and toss to coat. Cover and refrigerate. (longer is better) |
