Gives you a warm and comfy feeling just thinking about it. So easy and quick to whip up after a day's work or for lunch. Ingredients:
2 tablespoons butter |
1 chopped onion |
1/2 cup chopped carrots |
1/2 cup chopped celery |
1 small red bell pepper chopped |
1 cup unpeeled chopped little red potatoes |
1/4 teaspoon dried oregano |
2 8oz bottles clam juice |
1 lb bay scallops |
2 cups half and half |
kosher salt and pepper to taste |
1/2 cup chopped parsley |
Directions:
1. Melt butter in a large heavy saucepan.Add onions, carrots, celery, bell pepper potatoes and oregano. 2. Saute 10 minutes. 3. Add clam juice and scallops. 4. Cook 5 minutes. 5. Add half and half, salt and pepper 6. Cook until thoroughly heated. 7. Stir in parsley. 8. Serve with oyster crackers while it is piping hot. |
