Easy Roasted Garlic Salsa Fresca |

This is adapted from Rick Bayless's Mexican cooking show. It's a great way to include garlic in salsa without getting that bitter taste. I also use it for bruschetta. This is a very mild salsa. Ingredients:
1 large tomato |
1/2 onion |
2 -8 cloves garlic (as many as you can stand!) |
1/4 cup cilantro |
1 dash salt |
Directions:
1. Place garlic cloves (do not peel) in a small, heavy bottomed pan on med. 2. heat. 3. Heat for 10 minutes, turning often. 4. Let cool. 5. Chop tomato and onion. 6. Mince cilantro. 7. Peel garlic and mince. 8. Mix it all together with salt and enjoy! |
