Easy Roasted Chicken Marsala |

4 1/2 lb chicken - cut into 8 pieces |
3/4 t dried italian seasoning |
3/4 t salt |
10 oz pkg mushrooms -sliced - about 2 1/4 c |
1 red pepper - cut into 2 x1 pieces |
1 sweet onion - cut into 1/4 thick wedges |
1 1/2 c marsala wine or white grape juice |
2 t all-purpose flour |
1 t fresh parsley - chopped |
Directions:
1. Preheat oven 425* 2. Place chicken in roasting pan. 3. Sprinkle with 1/2 t Italian Seasoning and 1/2 t salt. 4. In bowl, toss mushrooms, red pepper, and onion with remaining Italian Seasoning and salt. 5. Arrange veggies around chicken and pour wine or juice into pan. 6. Roast 50 minutes or until chicken is no longer pink near bone. 7. Transfer chicken and veggies to serving platter and cover with foil to keep warm. 8. In a bowl, whisk together 1/4 C water and flour. 9. Skim off excess fat from juices in roasting pan. 10. Place pan over two burners on medium-high heat. 11. Whisking in flour mixture, cook about 5 minuted until thickened. 12. Spinkle chicken with parsley and serve with sauce. 13. Goes great with rice or noodles. 14. ENJOY! |
