You will need to make this one at least a day ahead so it can chill and the flavors can meld together. Ingredients:
1 small can green peas |
1 small can shoepeg corn |
1 small can french-style green beans |
1 small can chickpeas |
1 large jar pimiento, chopped |
1 cup chopped onions (i prefer sweet onions) |
1 cup chopped celery |
1/2 cup oil |
1 cup sugar |
1 tbsp water |
salt to taste |
pepper to taste |
3/4 cup vinegar |
Directions:
1. Drain the juice from all the canned items. 2. Put all vegetables in a bowl. 3. Mix the other ingredients together. 4. Pour over vegetables. 5. Refrigerate 24 hours. 6. Stir. 7. Serve cold. |
