Made these to mimic Lenny's raspberry danish. They give you a nice basket of treats before you get your gargantuan breakfast at Lenny's. Love the cheesy fruit danish the best. Cheater's version with the crescent roll dough and it worked out well.
Ingredients:
2 rolls of crescent roll dough
2 packages of room temperature cream cheese
1/2 cup of sugar
1/2 tsp of vanilla extract
1/2 tsp of fresh grated orange rind
1/2 cup of seedless raspberry jam, nuked 20 percent power/3 minutes
1 egg beaten
1 cup of confectioner's sugar
2 tsp of milk
1/2 tsp of fresh grated orange rind
Directions:
1. Preheat oven to 360 degrees (my oven needs to be calibrated)
2. line a 13 x 9 pan with one can of crescent rolls.
3. Pinch seams to seal.
4. Whip the cream cheese with the sugar, vanilla and the first part of the orange rind.
5. Spread over the crescents leaving a small border.
6. Melt jam, cool slightly, spread over the cream cheese mixture.
7. Top with the other tube of crescent dough (I rolled it out on my cutting board to seal the edges, measure 13 x 9 approx and rolled it over the rolling pin to transfer over the filing.)
8. Beat egg, brush top of dough.
9. Bake for 25 minutes until lightly golden.
10. Allow to cool 15 minutes.
11. While it cools, sift confectioner's sugar, add orange rind and milk to glazing consistency. Drizzle over cooled cheese crescents.
12. Cut in squares and serve.
