Hearty, healthy, YUMMY muffins! My husband's Gram gave me this recipe to try and I loved it - thought that I would share it with everyone else. :) Ingredients:
1 1/2 cups crushed raisin bran cereal |
1 cup buttermilk |
1/3 cup oil |
1 egg |
1 cup flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon vanilla |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
2/3 cup packed brown sugar |
1/2 cup raisins |
1 cup chopped apple |
nuts (optional) |
Directions:
1. Heat oven to 400. 2. Mix all ingredients. 3. Fill 12 greased muffin cups with mixture. 4. Bake for about 17 minutes. |
