This is a fantastic, quick, throw-together meal for a weeknight. Can also be served on tortilla chips or in tacos. Ingredients:
1 lb chicken breast, boneless, skinless |
1 (15 ounce) can diced tomatoes |
1 (8 ounce) can salsa verde |
1 (1 1/4 ounce) package taco seasoning |
1 cup hot water |
1 chicken bouillon cube |
Directions:
1. Add bouillan cube to hot water and dissolve in a 1-quart saucepan. 2. Add chicken breasts to pan and boil until cooked throughout. Shred chicken in pan while retaining juices. 3. Add taco seasoning, diced tomatoes and salsa verde to chicken; simmer for 20 minutes. 4. Serve with cheese, tortillas/chips, sour cream and/or lettuce. |
