A family favorite and takes minutes to put together.! Adjust the spices to taste. Ingredients:
2 eggs, lightly beaten |
1 (16 ounce) can solid pack pumpkin |
3/4 cup sugar (can use more sugar) |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/4 teaspoon clove |
1 2/3 cups evaporated milk |
1 (18 ounce) box yellow cake mix (or use white cake mix) |
1/2 cup butter, melted |
1 cup chopped nuts |
Directions:
1. Set oven to 350 degrees. 2. Grease a 13 x 9 baking pan. 3. In a medium-size bowl, mix together the eggs, pumpkin, sugar, salt, cinnamon, ginger, cloves and evaporated milk. 4. Pour into a prepared baking pan. 5. Sift the cake mix powder evenly over the pumpkin mixture (do not mix). 6. Drizzle melted butter evenly over the cake mix; sprinkle with nuts. 7. Bake for 40-50 mins, or until a knife inserted in the center comes out clean. |
