Autumn is in the air! Pumpkin Cupcakes are the way to go. Here is an easy recipe that you can whip up quickly. Enjoy! Ingredients:
1-15 oz can of pumpkin |
3 eggs |
1/2 cup veg. oil |
1 tsp. baking soda |
2 tsp. cinnamon or pumpkin pie spice |
1 pkg. yellow cake mix |
cream cheese frosting |
Directions:
1. Mix together: pumpkin, eggs, oil, baking soda, and spice. 2. Add the cake mix. 3. Beat for 1 min. on low. 4. Beat an addition 2 min. on high. 5. Fill cupcake liners 3/4 full. 6. Bake at 350 for 20 min. or until toothpick come out clean. 7. Cool 8. Frost with frosting of choice (cream cheese is our favorite) |
