Easy Pumpkin Cheesecake Bars |

Delicious pumpkin/cheesecake combination that is easy to put together and makes enough for a crowd. Ingredients:
1 (18 1/4 ounce) package yellow cake mix |
3 large eggs |
2 tablespoons margarine or 2 tablespoons butter, melted |
4 teaspoons pumpkin pie spice |
1 (8 ounce) package cream cheese, softened |
1 (14 ounce) can sweetened condensed milk |
1 (16 ounce) can pumpkin |
1/2 teaspoon salt |
1 cup chopped nuts |
Directions:
1. Preheat oven to 350°F. 2. In a large mixer bowl on low speed, combine cake mix, 1 egg, margarine and 2 tsp pumpkin pie spice until crumbly. 3. Press onto bottom of 15x10 inch baking pan. 4. In large mixer bowl, beat cream cheese until fluffy. 5. Gradually beat in sweetened condensed milk, 2 eggs, pumpkin, 2 tsp pumpkin pie spice and salt; mix well. 6. Pour over crust; sprinkle with nuts. 7. Bake 30-35 minutes or until set. Cool. 8. Refrigerate; cut into bars. Store covered in refrigerator. |
