A quick pumpkin cake utilizing a packaged cake mix. This cake is very moist and should be refrigerated to prevent mold growth. My daughter and her friends loved this cake when she was 5-6 years old; they ate it without topping. Ingredients:
one yellow cake mix with pudding |
one can pumpkin |
1/3 cup oil |
3 eggs |
1 to 4 tsp pumpkin pie spice (to taste) |
topping-whipped cream or cool whip, optional |
Directions:
1. Empty cake mix into mixing bowl. Add pumpkin, oil, eggs and pumpkin pie spice. Mix. Bake according to package instruction. 2. Top with whipped cream or Cool Whip before serving if desired. |
