This is a wonderful change from the ordinary. It goes great with pork, chicken, or turkey. Ingredients:
2 cups pumpkin, cooked and mashed |
(i use canned) |
2 cups flour |
1/2 tsp. baking powder |
2 eggs, slightly beaten |
salt and nutmeg to taste |
(i like to add 2tsp fresh sage leaves, snipped) |
Directions:
1. Mix together all ingredients, and stir well. 2. Let stand 1 hour. 3. Stir again and put on a well floured board. Divide dough into 3 parts. 4. Roll each part into a long snake about the diameter of a dime. 5. Cut into 1/2 inch peices 6. Drop a few peices into rapidly boiling salted water. 7. As soon as the dumplings rise, skim into a bowl of very cold water. Drain well. 8. Toss in butter and Serve immediatly 9. re-heat in a casserole with plenty of butter. 10. This is also wonderful with browned butter. |
