I LOVE potato soup, but everything I had always read said that it was a real pain to make. I don't remember where I ran across this recipe- probably online somewhere, but it is super easy, looks great, and always gets rave reviews. Ingredients:
3 medium potatoes, cubed |
2 cups water |
1/4 teaspoon salt |
1/4 cup finely chopped onion |
3 tablespoons butter |
3 tablespoons all-purpose flour |
ground black pepper |
3 cups milk |
1 cup shredded cheddar cheese |
1 cup cubed ham |
Directions:
1. Bring water and salt to a boil, add potatoes and cook until tender.Drain and reserve 1 cup of water. 2. Melt butter over medium heat. 3. Saute onions until tender. 4. Slowly add flour and pepper and cook for about 1 minute. 5. Gradually add potatoes, reserved water, and milk. Stir well, add cheese and ham. 6. Simmer on low, stirring often, for 20 minutes. 7. Garnish with more cheese, bacon bits, and chives. |
