Here is a super easy recipe for potato pancakes. My kids love them plain, but for a little zip you can add minced or chopped onion. Serve with soure cream and/or applesauce. A great Lenten recipe! Ingredients:
3 cups frozen shredded hash brown potatoes |
2 tablespoons flour |
2 eggs, beaten |
3 tablespoons butter, melted |
1 1/2 teaspoons water |
1/2 teaspoon salt |
1 - 2 tablespoons vegetable oil |
Directions:
1. Place hash browns in a strainer and rinse with cold water until thawed. 2. Drain thoroughly and transfer to a large bowl. 3. Add the flour, eggs, buter, water and salt. Mix well. 4. Heat oil in a large skillet or electric fry pan to medium heat. 5. Drop batter by 1/3 cupfuls into oil; fry until golden brown on both sides. 6. Drain on paper towels. Enjoy! |
