A simple fruit jam using the beautiful plum. This uses only the natural pectin in the fruit for it's texture, and honey and fruit juice for the sweeteners so you can make it to your sweet/tartness preference. :) Ingredients:
about 8 large, juicy, ripe plums, cut in half(i leave the pit and the skin on, because i like the tartness they lend, but you can remove both, if you'd like) |
3t 100% sweet juice(ie grape, white grape, raspberry blend or apple-i used white grape raspberry |
2t fresh lemon juice |
1t vanilla |
1/4-1/2 cup honey |
Directions:
1. In large dutch oven or similar pan, add juices and then add plums, cut side down. 2. Heat over medium heat until boiling then reduce heat to a high simmer for about 30 minutes, pressing often with a large fork or a potato masher to release the plum juices and soften the skin. 3. (at this point, remove the pits from the pan and if there are larger pieces of skin. I didn't remove any of the skin, at all. I left it in and it just gave it a slightly rustic texture in the end product. It wasn't chewy or fibrous and there were only very small pieces. I loved the lil hint of tartness it gave, but feel free to remove it if you'd like :) 4. Add honey and vanilla and stir well. 5. Continue to heat another 10-15 minutes. 6. You can test the spread by dipping a COLD spoon in the mixture and lift it up. Run a finger down the back side of the spoon. If the track you make, remains, it's done! :) 7. Serve on toast, biscuits, waffles, etc. |
