Mmm delicious yellow rice. Don't forget to pick out the cloves and cardamom pods as you eat! Serve with Low-Fat Chicken Curry (it won't be low fat any more if you serve it with this lovely buttery rice!) Ingredients:
1 ounce butter |
1 cup basmati rice |
1 teaspoon turmeric |
1 bay leaf |
4 green cardamom pods |
4 cloves |
1/2 teaspoon fennel seed |
1 teaspoon salt |
1 1/2 cups boiling water |
Directions:
1. Melt the butter in a saucepan. 2. Stir in the rice until it is coated in the butter. 3. Add the spices and salt. 4. Add the boiling water. 5. Cover with a tight fitting lid, and simmer on the lowest heat for 15 minutes-do not stir in the meantime. |
