Had this for the first time this past month and loved it. So quick and easy and can be adjusted to fit the number of servings desired. Quick if you use a prepared pesto sauce, or make your own if you have the ingredents and time. Read more . Goes equally well with pasta or smashed garlic potatoes. Just add a salad and hot rolls and you have a easy but delicious supper that can be dressed up for company or down for the family. Hope you enjoy as much as I did.. Ingredients:
8 whole boneless skinless chicken breast cut in half and rinsed |
1 jar prepared pesto sauce or homemade if you have ingredents |
1 - 1/2 cups shredded mozzarella cheese |
Directions:
1. Pre heat oven to 375 degrees 2. Line a shallow baking pan with foil and spray lightly with cooking oil. 3. Pat chicken halves dry and arrange in pan. 4. Spread liberally with pesto sauce 5. Cover with foil and bake for 30 minutes or until firm. 6. Uncover and sprinkle liberally with shredded cheese and return to oven to brown uncovered. 7. Serve with pasta or delicious with garlic mashed potatoes and a salad and rolls. 8. Enjoy |
